    The Season

    The 2016 season will be remembered as the earliest and most compressed on record. Though we started the same day as 2015, on February 14th, we finished on February 28th a whole four weeks earlier. A very warm, dry spring followed by a dry summer ensured fruit ripened early but in perfect condition. Late January rains of 40mm freshened the vines at just the right time and the wines are looking expressive, flavoursome and balanced. Moderate alcohols and acids this year will ensure wonderful drinking in the mid-term.

    Winemaking

    The most balanced, even 15 rows of of the Cabernet Sauvignon block on the property is farmed each year for this classic single site wine. Low crops and careful canopy management ensure powerful varietal flavours and great intensity in a medium bodied frame. 4.2t was picked on the 27th February and placed in the coolroom overnight. The following morning the cool bunches were destemmed and crushed into a single open fermenter where the grapes underwent fermentation and remained on skins for 30 days. This extended maceration produced silky tannins, essential for the structure and longevity of the wine. After pressing, the wine was racked to French oak barriques (35% new) for extended elevage (18 months) until bottling onsite on 27th November 2017. Only 257 dozen produced.

    Tasting Notes

    Blackberry, bay leaf and black olives with hints of spice and subtle floral perfumes drive the nose of the wine. The palate controlled by fine and talc-like tannins woven into a persistent and pure fruit finish. With tremendous poise and elegance, the 2016 Medhurst Cabernet Sauvignon will continue to improve with careful cellaring for over a decade. Ideally matched with locally farmed spring lamb cutlets and crisp rosemary, salted roast kipflers.
