Our chardonnay is planted east-west, with the goal to moderate the mesoclimate and therefore delay harvest by a week or two such that conditions are mild at harvest and flavours can develop slowly. Selective hand picking and whole-bunch pressing of the fruit created a complex, well structured and elegant wine, with a slightly floral nose. The palate is clean and crisp with great minerality and freshness. Enjoy it with a paella with plenty of chorizo and mussels.
