Each parcel of fruit receives the same care and attention in the winery as in the vineyard. New and older French oak is used after considering the potential for each parcel. Matt Steel, the former chief winemaker at Domaine Chandon, has joined Medhurst to bring his extensive experience making the highest quality cool climate wines and ensure that the quality grown in the vineyard is expressed in the wines.
Ross and Robyn have commissioned their architect son Tim to design a state of the art winery to be built on the Medhurst property. The winery will feature underground barrel storage and will sit in harmony with the hillside that it is set. Construction of the winery will commence shortly and it will be operational for the 2011 vintage.
